Ingredients
2 slices wholemeal bread
1 egg, hardboiled and sliced
1tsp soft cheese
2 leaves lettuce
1 large stick celery, cut into long chunks
1 rounded tsp pesto
1tbsp soft cheese
Also…
1 tbsp sunflower seeds
2tbsp raisins or sultanas
1 carrot, cut into sticks
1/2 apple cut into wedges (tossed in lemon juice)
Preparation
Spread each slice of bread with the soft cheese and top with the cucumber, sliced egg and lettuce. Sandwich together and cut into triangles or squares.
For the celery, mix the pesto and cream cheese until marbled, then spread into the groove of the celery chunks.
PREP AHEAD:
Unpeeled hard boiled eggs will keep in the fridge in a Zipper® Bag for up to 7 days, perfect for snacking or sarnies.
