Banana Curry

Banana curry may seem a bit strange, but it’s the perfect way to use up any overripe bananas. These fruits will add a touch of sweetness and give your dish a creamy consistency that will not disappoint you. Add tofu, shrimp or chicken and there you have it




Curry base:

3 onions (peeled and chopped)

3 ripe bananas

400ml vegetable broth

200g coconut milk


1tbsp. lemon juice

Salt, pepper, chilli flakes

2 tbsp. curry powder


Fry onion, add banana slices and caramalize for 2-3 minutes.

Add coconut milk and vegetable broth and simmer for a couple of minutes

Mix in a food processor and season to taste

Keep it fresh by covering with cling film
