BBQ Avocados with Quinoa

Ingredients

For the avocados

3 Avocados

Olive oil

Lime juice

For the quinoa salad

75 g quinoa

2 Coriander stems (leaves plucked)

1 Bunch parsley

25 g Cooked sweet corn

1 Cucumber

2 Tomatoes

2 Small sping onions

1 Lemon

Olive oil

Salt and pepper

Method

Cook the quinoa according to instructions, let it cool, and place it in a large bowl

Wash the vegetables and cut them into small cubes

Add all the ingredients, including the lemon juice and olive oil, to the quinoa and mix thoroughly. Season with salt and pepper, then cover with Cling Film and set aside

For an extra flavour kick, let the covered salad sit in the fridge for a few hours or even overnight

Halve the avocados and remove the stone. Then brush the avocado halves with lime juice and a bit of olive oil

Grill the avocados with the flesh side down for about 3 minutes, then remove them from the BBQ with tongs

Finally, distribute the quinoa salad on top of the avocado halves, and it’s ready!
