Courgette Waffles

Transform your left over fruit and veggies into the perfect 'to go' snack!

Ingredients

250 g Courgette

1/2 Apple

60g Butter (Melted)

2 Eggs

300ml Milk

175g Flour

2 tsp Baking Powder

25g Oat flakes

1 tsp Cinnamon

Method

Shred the courgette and apple

In a separate bowl, mix the melted butter, eggs and milk

Add to the courgette and apple and combine

In another separate bow, mix the dry ingredients: flour, baking powder, oat flakes and cinnamon

Gently fold in the courgette-apple-mixture and bake until crisp in your waffle maker

If there’s any not eaten, remember they’re the perfect on the go snack so simply store in a Bacofoil Zipper Bag!
