Easy Vegan Chocolate Cake

This quick and super easy chocolate cake is a winner with everyone every time! Not only is it delicious but it’s also fun to make with the whole family – give it a try!

Easy Vegan Chocolate Cake

INGREDIENTS:

For the cake:

  • Bacofoil Non-Stick Baking Paper
  • 200ml single soya cream alternative
  • 100ml water
  • 1tbsp lemon juice
  • 2tsp vanilla extract
  • 150g plant based spread
  • 3tbsp agave nectar, golden syrup or honey alternative
  • 175g caster sugar
  • 30g cocoa powder
  • 300g self raising flour
  • 1tsp bicarbonate of soda

For the frosting:

  • 1 1/2 tbsp single
  • soya cream alternative
  • 1tsp vanilla extract
  • 3tbsp cocoa powder
  • 125g plant based spread
  • 250g icing sugar

METHOD:

  1. Heat oven to Mark 4/ 180°C/ 160°C fan. Line the bases and sides of 2x20cm loose bottomed cake tins with Bacofoil Non-Stick Baking Paper. (Tip: Cut a circle for the base and a strip for the edge)
  2. In a jug, mix together soya cream, water, lemon juice and vanilla. Set aside for 5 mins (don’t worry about the appearance, it’s supposed to curdle!)
  3. In a small saucepan heat the spread and agave nectar until just melted, then add to the soya cream mixture.
  4. Sift sugar, cocoa, flour and bicarbonate of soda into a large bowl. Pour in the soya cream mixture and whisk well until smooth. Spoon into the two prepared tins, smooth the surface and bake for 30-35 mins until springy to the touch and an inserted skewer or knife comes out clean. Leave in the tins to cool for at least 10 mins, before turning out onto a cooling rack to cool completely.
  5. While the cake is cooking, make the frosting. Place all ingredients in a large mixing bowl, and using an electric whisk, mix on a low speed until the icing sugar is just combined. Increase the speed to full and whisk for 2-3 mins until thick and creamy. Chill until required.
  6. To assemble, place one cake on a serving plate and spread with half the frosting, leaving a 1cm gap around the edge of the cake. Top with the second cake and spread with the remaining frosting. Decorate however you like!

TIP: for vanilla frosting, omit the cocoa and add an extra 25g icing sugar
