Easy to make with simple fresh ingredients, this flavourful guacamole is delicious on its own or perfect as dip, condiment or salad - Enjoy!

1/2 Small Red Onion

1-2 Fresh Red Chillies

3 Ripe Avocados

1 Bunch Fresh Coriander

6 Ripe Cherry Tomatoes

2 Limes

Extra Virgin Olive Oil

Salt and Black Pepper


Peel the onion and deseed 1 chilli, then roughly chop it all on a large board

Remove the stones from the avocados and scoop the flesh onto the board.

Chop all together until fine and well combined.

Roughly chop the coriander leaves and add the tomatoes, then continue chopping it all together.

Add the juice from one of the limes and 1 tablespoon of oil, then season to taste with salt and  black pepper. Add more lime juice, if needed.

If you like more heat, deseed and finely chop the leftover chilli and scatter. Finish with a spinking of coriander leaves
