No Bake Cheesecake
Delicious and simple to make, this no bake cheesecake is perfect for when the temperatures saw outside. With it’s crunchy base and light and fluffy filling it’s the perfect companion for any summer evening
Prep Time 30 mins
Cook Time Chill for a few hours
Serves 8
Ingredients
200g Biscuits
100g Butter (melted)
600g Cream Cheese
200g Sour Cream
150g Sugar
1 packet Vanilla Sugar
4 leaves Gelatine (or vegetarian alternative)
2 Tbsp Lemon juice
Various seasonal berries
Method
Mix crushed biscuits with melted butter and press into a springform tin lined with Bacofoil Non-Stick Baking Paper
Refrigerate for 30 min
Meanwhile mix the cream cheese, sour cream, sugar and vanilla sugar together
Soften the gelatine, stir into warmed lemon juice and mix into the cream. Whip until stiff
Refrigerate for a few hours, then top with fresh seasonal berries and enjoy!
