One Pot Mustard Chicken

Serves 4
Ingredients
2 tsp Olive oil
4 Chicken legs
2 Leeks cut into thick slices
4 Large potatoes cut into 3 cm cubes
600 ml Chicken stock
½ small bunch of thyme
2 tbsp Mustard
125 ml Crème fraiche
320 g Frozen peas
Method
Fry the chicken in oil until crispy then set aside
Cut the leeks into slices and sauté in the same pan
Add the potatoes, pour in the chicken stock, and stir in the thyme. Cover with a lid and cook for 10 minutes
Stir in the mustard, crème fraiche, and peas
Add the chicken back into the pan so that most of it is covered in sauce and cook for around 20-25 minutes until tender
