Polenta Bites
You probably know polenta as side dish, right? But have you ever tried it as bites? They're perfect as a snack in between meals or alongside meat or fish dishes.
Ingredients
400ml Vegetable Stock
150g Quick cook Polenta
1/2 tsp Dried Thyme
40g Parmesan cheese, finely grated
Salt and Pepper
Olive Oil
Method
Make the polenta and line a 2lb bread loaf tin
Bring the stock to boil in a saucepan, then pour in the polenta and stir while the polenta cooks and thickens
Add the thyme, grated parmesan, and season with salt and pepper
Pour the polenta into the tin so that it’s around 1.5cm deep. Level off and allow to cool for 5 minutes before chilling in the fridge for around an hour
Lift the polenta out of the tin, and cut into even sized cubes
Fry in the air fryer for 5 mins or until nice and crispy
