Pumpkin 3 Ways

Pumpkin isn't just a seasonal favourite, it's also a versatile ingredient that serves as the perfect base for a range of dishes. These three quick recipes are not only super tasty, but also incredibly convenient to prepare and cook

Ingredients

For the The Classic Pumpkin Soup (2 portions), see below:

500g Pumpkin

400ml Vegetable Stock

50ml Orange Juice

2tbsp Curry Powder

Salt and pepper

For the Pan-fried pumpkin with feta, see below:

Some diced pumpkin

60g Feta

A handful of halved tomatoes

A few walnuts if you prefer

a touch of garlic or chilli powder (for a kick)

For the Autumn Salad with a Pumpkin Topping, see below:

Some diced pumpkin

A bowl of your favourite salad (include rocket)

Your preferred homemade dressing

A sprinkle of pomegranate seeds

Method

Firstly prepare the pumpkin once and then use it for all 3 dishes without starting from scratch each time.

To roast the pumpkin in the oven, you’ll need just four ingredients and our trusty Bacofoil® Non-Stick Foil. Simply cut the pumpkin into bite-sized chunks, spread them on a baking tray lined with the foil and drizzle with about 3 tbsps. olive oil and a little salt and pepper. Mix everything thoroughly then into the oven it goes. After about 20–25 minutes at 200°C in a fan oven, you’ll have wonderfully tender and flavoursome pumpkin pieces that make the perfect base

For the The Classic Pumpkin Soup:

Simply put the pumpkin pieces into a pan, add vegetable stock, bring to a boil and purée.

Season with orange juice and spices to taste and voilà

For the Pan-fried pumpkin with feta:

Just grab some of the pre-cooked cubes and toss them in a little oil in a pan

Sauté the pumpkin until golden brown

Then, sprinkle about 60 grams of feta on top per serving and add a handful of halved tomatoes or a few walnuts if you prefer

For an extra kick, season the dish with a touch of garlic or chilli powder

Autumn salad with a pumpkin topping:

Just whip up a bowl of your favourite salad (we recommend rocket)

Drizzle with your preferred homemade dressing and top with some diced pumpkin

Add sprinkle of pomegranate seeds
