Ingredients

200g sugar

1 pck. Vanilla sugar

3 tsp cinnamon

2 tsp cardamom (ground)

200g almonds with peel

Method

Put 200g of sugar, vanilla sugar, 3tsp of cinnamon and 2tsp cardamom together with 100ml of water in a saucepan, mix well and bring to the boil.

As soon as the sugar water starts to boil, stir in 200g almonds and bring to the boil again over a medium heat. Stir regularly with a cooking spoon. Simmer the almonds for approx. 10-15 minutes in the sugar water over a medium heat, stirring frequently until the liquid has evaporated. Once the liquid has evaporated and the sugar crystallizes again, heat the almonds, stirring constantly, until the sugar is liquid again and caramelized.

Once the almonds are coated with a nice shine, remove the pot from the stove. Place the burnt almonds on Bacofoil® Non-Stick Baking Paper. Spread the almonds and separate them into individual pieces. Leave to cool or go lukewarm and then you can indulge in the sheer deliciousness. Crunch away to your hearts content.

Tip: If you want to serve them a little differently or give them away, try creating these creative pouches. Cut a 20 x 20 cm square from Bacofoil® Non-Stick Baking Paper and fold to the corner making a triangle. Put the triangle with the longest side down in front of you. Mark the center on the short right side of the triangle and fold the lower-left tip of the triangle to hit that mark. Repeat the same with the other side. Now wrap the top edge in sucha way that a bag is created and fill with your tasty almonds.
