Veggie stuffed BBQ potatoes
For this irresistible BBQ recipe you only need a few ingredients. Stuffed with Mediterranean deliciousness, these potatoes are a real showstopper!

Ingredients
6 Large potatoes
1 Aubergine
1 Courgette
3 Tomatoes
Garlic
Basil
Rosemary
Olive oil
Salt
Method
Firstly, cut a thin slice off the base of the potato so it sits flat and stable.
Place the potato between the hands of 2 spatulas or chopsticks (or similar), no thicker than 1cm and slice thinly
Fill with vegetables and add garlic and basil
Top with seasoning and wrap the potatoes in aluminium foil.
Bake on the BBQ for approx. 1 hour then serve with a dip of your choice
