Ingredients
35g Cous cous
25g raisins or sultanas
1tsp mild curry powder
1/2 tbsp extra virgin olive oil
Splash lemon juice (fresh or bottled)
1/2 apple, cored and diced
80g drained canned chickpeas (1/3 can)
1 medium carrot, coarsely grated
Also…
handful cherry tomatoes
30g pitted olives
1 piece fruit
Preparation
In a small pan, bring 90ml water to the boil. Add cous cous, raisins and curry powder. Stir well, cover with a lid and remove from the heat. Leave for 5 mins. Remove lid, fluff the grains and leave to cool completely.
Once cooled, add the oil, lemon, apple, chickpeas and carrot. Chill until required.
PREP AHEAD:
Prepared cous cous (without apple and carrot) will keep in the fridge for 3 days in a Zipper® Bag or can be frozen for up to a month.
